The chefs for 1412 St. James Court are D'mytrek Brown and Shaun Chavis.
Shaun trained in Culinary Arts at Boston University where she also received a Masters Degree in Gastronomy. She's worked on food literary projects that have received national recognition, including Cooking Light Mad Delicious, which won the 2015 James Beard Award for Focus on Health, and The Carb Lovers Diet, which spent 12 weeks on the New York Times Non-Fiction Best Sellers list in 2010. She worked as a food editor for Health magazine and a cookbook development editor for Time Inc. Books, and in broadcast journalism for ABC News/The Walt Disney Company.
Shaun is a former instructor at Le Cordon Bleu College of Culinary Arts in Atlanta, and she is a founding member of Les Dames D’Escoffier: Birmingham, Alabama chapter. She currently owns Saltshaker Marketing, a boutique agency in Atlanta that creates cookbooks and other culinary content and marketing strategies for food, wellness, and tourism companies.
For Dining at the Mansions 2018, Shaun will co-create an evening of culinary delight in partnership with chef D'mytrek Brown. D'mytrek is currently a food stylist based in Atlanta, and has been a professional chef for 25 years. You have no doubt seen his work in television, video, and print media as he counts Whole Foods, Food & Wine, Southern Living, Cooking Light, Delta Airlines, and Coca-Cola among his many clients. As a chef, he's cooked for celebrities such as Robert Downey, Jr., Scarlett Johansson, Chris Hemsworth, Mark Ruffalo, Chris Evans, Muhammad Ali, and Laurence Fishburne. He's a graduate of Le Cordon Bleu College of Culinary Arts.
Returning to Louisville from Napa wine country for his second year of Dining at the Mansions, is Dan Blakely. Dan is a winemaker at Trefethen Vineyards. He attended UC Davis where he obtained a degree in Viticulture and Enology. Dan has worked at the famed Schramsberg Vineyards, and Red Tail Ridge in the Finger Lakes region of New York. Dan will partner with Shaun and D'mytrek to create wine pairings to compliment each course of the meal, including some wine selections that are not readily available in the Louisville market!
1412 St. James will offer vegan and non-vegan meal options.
